Chicken, Lemon & Olive Tagine

Serves 4

Cooking Time: 1 Hour


Ingredients

  • 4 chicken thighs
  • 1 onion, finely sliced
  • 2 garlic cloves, crushed
  • 1 preserved lemon, chopped
  • 1 handful green olives
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • Salt & black pepper
  • Fresh parsley
  • 150ml water

Method

1. Prepare the Base

Add olive oil and sliced onions to your tagine over low heat. Cook gently for 5 minutes until softened.

2. Add the Spices

Stir in the garlic, cumin, paprika and turmeric until fragrant.

3. Add the Chicken

Place the chicken into the tagine and coat evenly in the spices and onions.

4. Add the Flavour

Add the preserved lemon, olives and water.

5. Slow Cook

Cover with the lid and cook gently over low heat for 45–60 minutes until the chicken becomes beautifully tender.

6. Serve

Finish with fresh parsley and serve with fluffy couscous or warm Moroccan bread.
